Macaroni Pie is a signature Barbadian dish, and without a doubt you will find very few Bajans who don’t consider it to be one of their favorites.  Macaroni Pie, or ‘Pie’, as many Bajans call it, is served as a side dish to anything from Flying fish to Baked Chicken. Add some gravy and salad and you have an award winning meal. Whether you are getting pie from a Bajan Buffet at one of our many local restaurants, the back of a food van, or Sunday lunch at Granny’s, we can guarantee that you won’t be disappointed.

If you’re feeling adventurous and want to impress your friends and family at your next social event, try making this signature Bajan Dish with this easy recipe below- it is sure to be a crowd pleaser!

 

Macaroni Pie

Ingredients

8oz/250g macaroni (preferably long tubes as opposed to typical American macaroni)
One tablespoon butter or margarine
12oz/375g sharp cheddar cheese, grated
1 egg
1 cup 8floz/240ml milk
Two teaspoons onion powder
One teaspoon hot English mustard
One teaspoon white pepper
One teaspoon salt
1/2 teaspoon red pepper sauce or cayenne pepper (optional)

Garnish:

Two tablespoons fine breadcrumbs
Two teaspoons butter
Two tablespoons grated cheddar cheese

Method

Bring water to a boil, add salt and cook macaroni pasta. Cook until tender (about 8 mins).

Preheat oven to 350F or 180C.

Drain pasta and pour it back into the hot pot it was cooked in. Mix in the butter.

Grate cheese and add to macaroni while it is still hot.

Whisk the egg and add the milk, onion powder, white pepper, salt, pepper sauce, and mustard. Pour in with the macaroni and mix.

Place in a greases ovenproof casserole dish. Add some grated cheese, breadcrumbs and butter to the top of the macaroni.

Cook for 30-40 minutes.
